Here is a great summer salad that all of your family should enjoy, even your kids.  This in one way to get everyone to eat their vegies!  I added barbecued shrimp to it, but you could add chicken or taco meat, etc.

Romaine lettuce

Grape tomatoes

2 green onions, sliced

2 bell peppers, diced, any color

1/2 cup black beans

2 grilled corn on the cob, cut off

1 tbsp pumpkin seeds

1 avocado, diced

2 tbsp. cotija cheese, crumbled

In a large bowl combine the first six ingredients and a protein if you are adding one and then add your favorited salad dressing.  Top off with the seeds, avocado and cheese.  It is yummy and good for you!
